Sausage and Pancake Breakfast Muffins

While I do a lot of make ahead and freeze meals, I never seem to have much available for breakfast. It IS the most important meal of the day, no?  I went looking around for ideas on items that would freeze well for easy grabbing in the morning.  This weekend, I decided to try a couple of new things for freezing.  I'll post the other one later, but here are some good muffins.


Sausage and Pancake Breakfast Muffins

  1. Mix up your favorite pancake recipe, whatever that may be.  
  2. Cook link sausage and set aside to cool.
  3. In greased muffin pan, put 1/3 of a sausage link, then fill 2/3 of the way with pancake batter.
  4. (This is optional, but yum) Drizzle some maple syrup on top.
  5. Bake at 350* for 15 minutes.
  6. Freeze on a cookie sheet, then drop the frozen muffins into a large freezer bag.
  7. To reheat, wrap in a paper towel and cook in the microwave for 30-45 seconds.

This is right before baking, with the syrup drizzled on.  These are good and less messy than pouring the syrup on after baking.
